Recipe: 00213 Title : Chickens w/Bitter Chocolate Sauce Author: Niki Boschma Date : July 1995 _________________________________________________________________________ Spring Chickens with Bitter Chocolate Sauce ingredients : 60ml/4tbsp olive oil 4poussins ( little chickens I guess) salt and pepper 45g/3tbsp flour 1 clove garlic crushed 280ml/1/2 pint chicken stock 60ml/ 4tbsp white wine 10ml/ 2tbsp unsweetened cooking chocolate grated lemon slices to garnish Season the birds and fry in the oil in heavy based pan/casserole dish, untill go lden brown on all sides. Take out the birds and add flour, cooking until pale st raw colour. Add garlic and cook to soften, pour in stock gradually, stirring, ad d wine and bring to the boil. reduce to simmer, replace the birds, cover and coo k 20-30 mins or until tender. Place the birds on serving dish, skim any fat from surface of sauce, add chocolate and cook stirring quickly for 2-3mins.
