Recipe: 00110 Title : Chocolate Angel Food Cake Author: Luke Rao Date : May 1995 _________________________________________________________________________ Serves: 1O 3/4 cup sugar 5 medium egg whites 1/2 cup siffed cake flour 1/2 teaspoon cream of tartar 1/4 cup unsweetened cocoa powder Preheat oven to 375 degrees. Grease an 8-inch tube pan on bottom only and flour pan. Shake out excess flour. Sift together 2 tablespoons sugar and all the sifted flour and cocoa. Beat whites until frothy. Beat in cream of tartar and continue beating until peaks fold over slightly when beater is lifted. Gradually sprinkle remaining sugar over surface of egg whites, 2 tablespoons at a time and fold in with rubber spatula. Sift 1/4 cup of cocoa mixture over surface and fold in. Repeat until all the mixture is added. Turn batter into prepared pan. Bake 20 minutes.
