Recipe: 00092 Title : Chitty Chitty Bang Bang Fudge Author: Date : May 1995 _________________________________________________________________________ Our traditional family recipe came out of the back of the book "Chitty Chitty Bang Bang." It is even richer than traditional fudge, and absolutely delicious. 4 2/3 cups sugar 1 stick butter 1 large can evaporated milk 2 ounces unsweetened chocolate (I like Merkans) 2 tablespoons corn syrup 2 tablespoons water Cook over medium heat, stirring constantly until melted. Cover for 5 minutes over low heat, to steam down the sugar crystals. Cook, stirring occasionally, until mixture reaches soft ball stage. let sit for 15-20 minutes, add 1 teaspoon of vanilla extract, and beat just until mixture starts to stiffen and loses its gloss. Add nuts (if desired), and our into a buttered pan. Let cool until firm. I now use a hand mixer to beat the fudge, but you have to be very careful because there is about a 5 second window between when the fudge is ready to pour, and when it is too stiff to pour. Beginners might want to stick with a wooden spoon, or use the hand mixer for a couple of minutes and switch to a spoon. -=-=-=-=-=- _________________________________________________________________________
