Recipe: 00045 Title : Chocolate Cheesecake Author: PRHolland Date : April 1995 _________________________________________________________________________ Crust: 1-1/2 c. vanilla wafers or graham cracker crumbs 1/3 c. sugar 1/4 c. butter or margarine, melted Combine ingredients and press crust on bottom and half-way up the sides of a 9 inch springform pan (I've also used a deep dish pie pan), set aside. Filling: 2 8oz. pkgs. cream cheese, softened 1-1/4 c. sugar 1/3 c. cocoa 1 tsp. vanilla 3 egg yolks, beaten lightly 3 egg whites 3 Tbsp. sugar Cream together cream cheese, sugar, cocoa, and vanilla. Add egg yolks, beat well. In a separate bowl, beat egg whites with 3 Tbsp. sugar until stiff peaks form; fold into cream cheese mixture. Pour into crust. Bake at 375 for 35 minutes. Cool slowly in oven for 30 minutes (oven door open) Topping: 1 c. sour cream 2 Tbsp. sugar 1 tsp. vanilla Combine topping ingredients, spread on warm cheesecake; cool and chill 4 hours or overnight.
