Recipe: 00021 Title : Double Chocolate Doughnuts Author: Joel Ehrlich Date : April 1995 _________________________________________________________________________ Yields 12 Doughnuts DOUGHNUTS: 1/2 tsp Salt 1 Egg 1/3 Cup Milk 1/2 Cup Sugar CHOCOLATE FROSTING: 1 oz Unsweetened Chocolate 2 Tbls Butter 1 Tbls Butter 1 oz Unsweetened Chocolate 1/2 Cup Mashed Potatoes 2 Tbls Boiling Water 1 3/4 Cups Flour 1/4 tsp Vanilla 3 tsp Baking Powder Beat the egg until light. Beat in the sugar. Melt the chocolate and butter together. Add to the egg mixture. Stir in the mashed potatoes. Mix the flour, salt and baking powder together. Add the milk to the egg mixture, alternating with the flour mixture. Chill for 1 hour. Roll out on a lightly floured board to a 3/8" thickness. Cut using a floured doughnut cutter. Fry until crusty brown (about 2 minutes). Drain. Prepare the frosting by melting the butter and chocolate together. Beat in the sugar, boiling water and vanilla. Mix thoroughly.
